I almost ended a quick meal at the bar at Santa Monica’s Pasjoli last week with the Basque cheesecake because, well, it’s Basque cheesecake — but the server stopped me. “You’re getting the pain perdu,” she ordered. Not on the actual menu (yet, anyway), the fluffy custard-soaked cross between a pancake and french toast came dusted with powdered sugar, alongside tiny crystal dishes of macerated strawberries, candied nuts, and fresh whipped cream.
